What type of job are you looking for?
Truly, I want to operate a food hut on a popular tourist beach selling various local fresh meats, seafood and vegetables in tantalizing sauces. I would also enjoy working as a Private Chef for any sort of catering. I enjoy teaching, and would like to get involved with the HACCP movement in Belize. I would also enjoy teaching Culinary Arts or private cooking classes.

Belize I am a community oriented person with a great deal of intelligence and experience that I enjoy sharing. I am drawn to the small country of Belize because of it's size, climate, and community. I plan to purchase a small home there once I have my budget arranged.

I operate a Personal Chef business of my own, I also work in various kitchens for the University of Washington. I also work with a goat farmer in Washington with promoting his farm fresh meat and dairy.

Medical - Certified Nursing Assistant Social Services - Counselor for Disadvantaged adults and children Restaurants - all front and back of house positions

Which do you consider more valuable? Formal education or skills and why?
Skills, because you can get the job done with skills. A formal education does not guarantee skill, work ethic, integrity, or an ability to work at all. I have both.

Speed, efficiency, being in "the zone" without distractions from coworkers.
What was your worst working experience?
Working as a catering cook in a huge establishment in Seattle with too many Chefs and not enough decision making...waste of time, money, energy. Knowing that I, being the lowly line cook, had the knowledge to tighten up the system and make more money while saving the company a ton of money.
What is the most important lesson you have learnt throughout your career?
Don't shit where you eat.
What unique skills do you have?
I can turn inexpensive ingredients into gourmet cuisine. My waste factor is lower than any other cook I have ever worked with. I am a genious with budgets and controlling costs. I am resourceful and skilled in making things happen under the gun. I have a knack for smoking and curing meats, cheeses, etc. I am a good teacher and work well with children.
What would you consider as your 'dream job'?
Being paid by the Government to operate as a spy for "bad" people while I run a food hut on the beach. I am incredibly observant.
What are the most interesting aspects of your field?
Novelty, cycle of life, travel, endless possibilities. Fire, knives, and the people that play with them.
Wjat are the least interesting aspects of your field?
I am hard pressed to find restaurants that I truly love to eat in. I always seem to find some mistake or know a better way to prepare the dish. HOWEVER... If this industry paid fairly, maybe I would eat at places that really knock my senses into the next millenium...but maybe if I lived in a place like Belize, the big city circumstances would cease to be relevant?
WHEN CAN YOU START?
I have some pending business to attned to in Seattle before I permanently relocate. I am interested in setting up interviews for when I visit Belize - the time I visit will depend on any interviews that I schedule. I would like any opportunity to speak with business associate who finds me interesting.
